This is one of our favorite recipes. Not to brag or anything, but Byron says I can make these better than he has ever had at any restaraunt. I use chicken, but you can use shredded beef or ground beef also. I've never made them with beef so they probably won't taste as good as mine. HeeHee. Also, I don't really follow this recipe exactly, I make adjustements.
2 onions chopped (I use very small onions or 1 large onion); 2 cloves garlic, minced; 1 Tbl vegetable oil; 3 cups of shredded chicken (or 2 LBS of ground beef); 2 medium tomatoes, chopped (I don't use these because we don't like tomatoes); 1 can (8 oz.) green chilies, chopped (I use two cans to spice it up more); 1 tsp cumin ( I don't really measure this out, I just sprinkle it on until I feel like it is enough); 1/2 tsp salt; pepper to taste; 1/2 LB cheddar cheese, grated; 20 flour tortillas (10-inch size); vegetable oil for frying ( I don't use this. I bake them at 400 degrees for 20 min or until both sides are golden brown.); salsa; sour cream. We also eat ours with refried beans.
Saute onions and garlic in 1 TBL of oil in large frying pan for 2-3 min. Add chicken and cook until thoroughly browned. (I actually boil my chicken so it is more moist and then add it to the onions and garlic and let the flavors mix for about 3 minutes or so). Mix in tomatoes, green chilies, cumin, salt, and pepper. Place a small amount of grated cheese in the middle of the tortilla. Top with 2-3 TBL of meat mixture. Secure with a toothpick. Brown on all sides in a small amount of oil in frying pan or bake them.
I actually make a big batch of this and freeze them. That way if I am unable or not in the mood to cook a meal, all I have to do is pull them from the freezer and bake them. And it is something Byron can cook for himself if I am gone that evening. Enjoy!!!!!
